  • 1/4 cup coconut milk
  • 1 teaspoon Creole seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the flesh, leaving a shell to stuff.
  3. In a large bowl, mix the cooked rice, chopped onion, diced bell pepper, chopped tomato, black beans, coconut milk, Creole seasoning, salt, and pepper.
  4. Stuff the zucchini shells with the rice and vegetable mixture.
