Ingredients
- 4 medium zucchinis
- 1 cup cooked rice

- Salt and pepper to taste
- 1/4 cup breadcrumbs

Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the flesh, leaving a shell to stuff.
- In a large bowl, mix the cooked rice, chopped onion, diced bell pepper, chopped tomato, black beans, coconut milk, Creole seasoning, salt, and pepper.
- Stuff the zucchini shells with the rice and vegetable mixture.
- Sprinkle the breadcrumbs on top of the stuffed zucchinis and drizzle with olive oil.
