Creole Sweet Potato Casserole

Ingredients

  • 4 large sweet potatoes, peeled and diced
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted
  • 1/4 cup milk
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place the diced sweet potatoes in a large pot and cover with water. Bring to a boil and cook until the sweet potatoes are tender, about 15 minutes. Drain and mash the sweet potatoes.
  3. In a large bowl, combine the mashed sweet potatoes, brown sugar, melted butter, milk, beaten eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until well combined.
  4. Transfer the sweet potato mixture to a greased casserole dish and smooth the top with a spatula.
  5. Sprinkle the chopped pecans over the top of the sweet potato mixture.
  6. Bake in the preheated oven for 45-50 minutes, or until the casserole is set and the top is golden brown.
  7. Remove from the oven and let it cool for a few minutes before serving.
