Creole Sweet Potato Casserole

Ingredients
- 4 large sweet potatoes, peeled and diced
- 1/2 cup brown sugar
- 1/4 cup butter, melted
- 1/4 cup milk
- 2 eggs, beaten
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C).
- Place the diced sweet potatoes in a large pot and cover with water. Bring to a boil and cook until the sweet potatoes are tender, about 15 minutes. Drain and mash the sweet potatoes.
- In a large bowl, combine the mashed sweet potatoes, brown sugar, melted butter, milk, beaten eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until well combined.
- Transfer the sweet potato mixture to a greased casserole dish and smooth the top with a spatula.
- Sprinkle the chopped pecans over the top of the sweet potato mixture.
- Bake in the preheated oven for 45-50 minutes, or until the casserole is set and the top is golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
