Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 cups whole milk
  • 2 large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced prosciutto
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon nutmeg
  • 2 cups marinara sauce

Instructions

  1. In a large bowl, whisk together the flour, milk, eggs, salt, and pepper to make the crespelle batter. Let it rest for 10 minutes.
  2. In another bowl, mix the ricotta, mozzarella, prosciutto, Parmesan, parsley, and nutmeg to make the filling.
  3. Heat a non-stick skillet over medium heat and pour in a ladle of batter, swirling to coat the bottom of the pan. Cook for 1-2 minutes, then flip and cook for another minute. Repeat with the remaining batter.
  4. Preheat the oven to 375°F (190°C). Spread a thin layer of marinara sauce on the bottom of a baking dish.
  5. Place a spoonful of the filling on each crespelle, roll them up, and place them seam side down in the baking dish.
  6. Top the crespelle with the remaining marinara sauce and a sprinkle of mozzarella cheese.
