Ingredients
- 1 cup all-purpose flour
- 1 1/2 cups whole milk
- 2 large eggs
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup diced prosciutto
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon nutmeg
- 2 cups marinara sauce
Instructions
- In a large bowl, whisk together the flour, milk, eggs, salt, and pepper to make the crespelle batter. Let it rest for 10 minutes.
- In another bowl, mix the ricotta, mozzarella, prosciutto, Parmesan, parsley, and nutmeg to make the filling.
- Heat a non-stick skillet over medium heat and pour in a ladle of batter, swirling to coat the bottom of the pan. Cook for 1-2 minutes, then flip and cook for another minute. Repeat with the remaining batter.
- Preheat the oven to 375°F (190°C). Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Place a spoonful of the filling on each crespelle, roll them up, and place them seam side down in the baking dish.
- Top the crespelle with the remaining marinara sauce and a sprinkle of mozzarella cheese.
- Bake for 20 minutes, until the cheese is melted and bubbly.
