Cretan Fisherman's Soup (Κρητική Ψαρόσουπα)
This traditional Cretan fisherman's soup is a hearty and flavorful dish that captures the essence of Cretan cuisine.
Ingredients
- 1 lb fresh fish fillets, such as red snapper or sea bass
- 1/4 cup extra virgin olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 4 cups fish or vegetable broth
- 1/2 cup dry white wine
- 1 bay leaf
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley
- Crusty bread for serving
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Add the diced tomatoes, broth, white wine, bay leaf, and oregano. Bring to a simmer.
- Gently add the fish fillets to the pot and simmer for 15-20 minutes, until the fish is cooked through.
- Season with salt and pepper to taste.
- Remove the bay leaf and discard.
- Serve the soup hot, garnished with chopped parsley and accompanied by crusty bread.
