Cretan Fisherman's Soup (Κρητική Ψαρόσουπα)

Ingredients

  • 1 lb fresh fish fillets, such as red snapper or sea bass
  • 1/4 cup extra virgin olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups fish or vegetable broth
  • 1/2 cup dry white wine
  • 1 bay leaf
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley
  • Crusty bread for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Add the diced tomatoes, broth, white wine, bay leaf, and oregano. Bring to a simmer.
  4. Gently add the fish fillets to the pot and simmer for 15-20 minutes, until the fish is cooked through.
  5. Season with salt and pepper to taste.
  6. Remove the bay leaf and discard.
  7. Serve the soup hot, garnished with chopped parsley and accompanied by crusty bread.
