Cretan Lamb Stifado
Cretan Lamb Stifado is a traditional Greek stew that features tender lamb cooked with a rich tomato sauce, sweet pearl onions, and aromatic spices. This hearty dish is a staple of Cretan cuisine and is perfect for a comforting family meal.
Ingredients
- 2 lbs lamb, cut into chunks
- 1/4 cup olive oil
- 1 lb pearl onions, peeled
- 4 garlic cloves, minced
- 1 cup red wine
- 1 can (14 oz) crushed tomatoes
- 1/4 cup red wine vinegar
- 1 cinnamon stick
- 4 cloves
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the lamb and brown on all sides.
- Add the pearl onions and garlic to the pot and cook until softened.
- Pour in the red wine and allow it to simmer for a few minutes.
- Add the crushed tomatoes, red wine vinegar, cinnamon stick, cloves, and bay leaf to the pot. Season with salt and pepper.
- Cover the pot and simmer over low heat for 1.5 to 2 hours, or until the lamb is tender.
- Remove the cinnamon stick, cloves, and bay leaf before serving.
