Cretan Lamb Stifado

Ingredients

  • 2 lbs lamb, cut into chunks
  • 1/4 cup olive oil
  • 1 lb pearl onions, peeled
  • 4 garlic cloves, minced
  • 1 cup red wine
  • 1 can (14 oz) crushed tomatoes
  • 1/4 cup red wine vinegar
  • 1 cinnamon stick
  • 4 cloves
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the lamb and brown on all sides.
  2. Add the pearl onions and garlic to the pot and cook until softened.
  3. Pour in the red wine and allow it to simmer for a few minutes.
  4. Add the crushed tomatoes, red wine vinegar, cinnamon stick, cloves, and bay leaf to the pot. Season with salt and pepper.
  5. Cover the pot and simmer over low heat for 1.5 to 2 hours, or until the lamb is tender.
  6. Remove the cinnamon stick, cloves, and bay leaf before serving.
