Ingredients
- 3 cups all-purpose flour
- 1 packet active dry yeast
- 1 cup warm water
- 1/4 cup extra virgin olive oil
- 1/2 cup Kalamata olives, pitted and chopped
- 2 tablespoons fresh rosemary, chopped
- 1 teaspoon salt
- 1 teaspoon sugar
Instructions
- In a small bowl, dissolve the sugar in the warm water. Sprinkle the yeast over the water and let it sit for 5 minutes until it becomes foamy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Stir until a soft dough forms.
- Knead the dough on a floured surface for 5-7 minutes, or until it becomes smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour.
- Preheat the oven to 425°F (220°C). Punch the dough down and transfer it to a greased baking sheet. Press the dough into a rectangle shape, then use your fingers to make indentations all over the dough.
- Drizzle the dough with olive oil, then sprinkle the chopped olives and rosemary on top. Let the dough rest for 15 minutes.
- Bake the focaccia in the preheated oven for 20-25 minutes, or until it is golden brown and sounds hollow when tapped on the bottom. Let it cool for a few minutes before slicing and serving.
