Cretan Olive and Rosemary Focaccia (Κρητική Φοκάτσια με Ελιές και Δεντρολίβανο)

Ingredients

  • 3 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 cup warm water
  • 1/4 cup extra virgin olive oil
  • 1/2 cup Kalamata olives, pitted and chopped
  • 2 tablespoons fresh rosemary, chopped
  • 1 teaspoon salt
  • 1 teaspoon sugar

Instructions

  1. In a small bowl, dissolve the sugar in the warm water. Sprinkle the yeast over the water and let it sit for 5 minutes until it becomes foamy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Stir until a soft dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes, or until it becomes smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour.
  4. Preheat the oven to 425°F (220°C). Punch the dough down and transfer it to a greased baking sheet. Press the dough into a rectangle shape, then use your fingers to make indentations all over the dough.
  5. Drizzle the dough with olive oil, then sprinkle the chopped olives and rosemary on top. Let the dough rest for 15 minutes.
  6. Bake the focaccia in the preheated oven for 20-25 minutes, or until it is golden brown and sounds hollow when tapped on the bottom. Let it cool for a few minutes before slicing and serving.
