Ingredients
- 1 pound fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh dill, chopped
- 1/4 cup olive oil
- 1/2 cup green onions, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 sheets phyllo pastry
- 1/2 cup melted butter
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the chopped spinach, feta cheese, dill, olive oil, green onions, salt, and black pepper.
- Brush a 9x13 inch baking dish with melted butter. Lay 1 sheet of phyllo pastry in the dish and brush with melted butter. Repeat with 3 more sheets of phyllo, brushing each layer with butter.
- Spoon the spinach and feta mixture over the phyllo layers in the baking dish.
- Layer the remaining 4 sheets of phyllo over the spinach mixture, brushing each sheet with melted butter.
- Score the top layers of phyllo with a sharp knife to create squares or diamonds.
- Bake in the preheated oven for 40 minutes, or until the phyllo is golden brown and crispy.
- Allow the pie to cool for a few minutes before slicing and serving.
