Ingredients

  • 1 pound fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh dill, chopped
  • 1/4 cup olive oil
  • 1/2 cup green onions, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 sheets phyllo pastry
  • 1/2 cup melted butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the chopped spinach, feta cheese, dill, olive oil, green onions, salt, and black pepper.
  3. Brush a 9x13 inch baking dish with melted butter. Lay 1 sheet of phyllo pastry in the dish and brush with melted butter. Repeat with 3 more sheets of phyllo, brushing each layer with butter.
  4. Spoon the spinach and feta mixture over the phyllo layers in the baking dish.
  5. Layer the remaining 4 sheets of phyllo over the spinach mixture, brushing each sheet with melted butter.
  6. Score the top layers of phyllo with a sharp knife to create squares or diamonds.
  7. Bake in the preheated oven for 40 minutes, or until the phyllo is golden brown and crispy.
  8. Allow the pie to cool for a few minutes before slicing and serving.
