Ingredients
- 4 large red or green bell peppers
- 1 cup rice
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the peppers and remove the seeds and membranes.
- In a large bowl, combine the rice, onion, tomatoes, parsley, mint, olive oil, salt, and pepper. Mix well.
- Stuff the peppers with the rice mixture and place them in a baking dish.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the rice is cooked.
