Cretan Zucchini and Cheese Fritters (Κολοκυθοκεφτέδες)

Ingredients

  • 2 medium zucchinis, grated
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh dill, chopped
  • 2 green onions, finely chopped
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. In a large bowl, combine the grated zucchini, feta cheese, mint, dill, and green onions.
  2. In a separate bowl, beat the eggs and then add them to the zucchini mixture.
  3. Sift in the flour and baking powder, and season with salt and pepper. Mix until well combined.
  4. Heat a thin layer of olive oil in a large skillet over medium heat.
  5. Spoon the zucchini mixture into the hot oil, flattening each spoonful with the back of the spoon to form fritters.
  6. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  7. Remove the fritters from the skillet and place them on a paper towel to drain any excess oil.
  8. Serve the fritters warm with a side of tzatziki or yogurt sauce.
