Ingredients
- 2 medium zucchinis, grated
- 1 cup feta cheese, crumbled
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh dill, chopped
- 2 green onions, finely chopped
- 2 eggs
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- Salt and pepper to taste
- Olive oil for frying
Instructions
- In a large bowl, combine the grated zucchini, feta cheese, mint, dill, and green onions.
- In a separate bowl, beat the eggs and then add them to the zucchini mixture.
- Sift in the flour and baking powder, and season with salt and pepper. Mix until well combined.
- Heat a thin layer of olive oil in a large skillet over medium heat.
- Spoon the zucchini mixture into the hot oil, flattening each spoonful with the back of the spoon to form fritters.
- Cook for 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the skillet and place them on a paper towel to drain any excess oil.
- Serve the fritters warm with a side of tzatziki or yogurt sauce.
