Crevettes Frites Avec Sauce Aux Arachides (fried Shrimp With Peanut Sauce)

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup unsalted peanuts, finely chopped
  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • Vegetable oil for frying
  • Salt and pepper to taste

Instructions

  1. In a small bowl, combine the chopped peanuts, peanut butter, soy sauce, honey, rice vinegar, ginger, and garlic to make the peanut sauce. Set aside.
  2. Season the shrimp with salt and pepper.
  3. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  4. Dredge each shrimp in the flour, then dip into the beaten eggs, and coat with panko breadcrumbs, pressing gently to adhere.
  5. In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
  6. Serve the fried shrimp with the prepared peanut sauce for dipping.
