Crickhowell Cider-braised Chicken Thighs

Ingredients

  • 4 chicken thighs
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup Crickhowell cider
  • 1 cup chicken broth
  • 2 tablespoons honey
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and sear until golden brown, about 4 minutes per side. Remove the chicken from the skillet and set aside.
  3. Lower the heat to medium and add the diced onion to the skillet. Cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.
  4. Pour in the Crickhowell cider, chicken broth, honey, and thyme. Stir to combine, then return the chicken thighs to the skillet.
  5. Bring the liquid to a simmer, then cover and cook for 45-50 minutes, or until the chicken is cooked through and tender.
  6. Remove the chicken thighs from the skillet and place on a serving platter. Simmer the sauce for a few more minutes to thicken, then pour over the chicken.
