Ingredients
- 1 lb fresh white fish fillets, cut into small cubes
- 1 cup lime juice
- 1 red onion, thinly sliced
- 1 bell pepper, diced
- 1-2 jalapeño peppers, finely chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup cilantro, chopped
- Salt and pepper to taste
- 1 avocado, diced (optional, for garnish)
Instructions
- In a glass or ceramic bowl, combine the fish cubes with the lime juice. Make sure the fish is fully submerged in the juice. Cover and refrigerate for about 15-20 minutes, or until the fish is opaque and "cooked" by the lime juice.
- Once the fish is ready, drain off the excess lime juice. Add the red onion, bell pepper, jalapeño peppers, cherry tomatoes, and cilantro to the bowl with the fish. Gently toss to combine all the ingredients.
- Season the ceviche with salt and pepper to taste. If desired, add the diced avocado and gently mix it in with the ceviche.
- Divide the criollo ceviche into individual serving bowls or plates. Serve immediately and enjoy!
