Crispy Appam With Coconut Milk

Ingredients

  • 1 cup raw rice
  • 1/4 cup grated coconut
  • 1/2 tsp active dry yeast
  • 1/2 tsp sugar
  • Salt to taste
  • 1 cup coconut milk

Instructions

  1. Soak the raw rice in water for 4-5 hours.
  2. Grind the soaked rice and grated coconut to a smooth batter.
  3. Dissolve yeast and sugar in 2 tbsp of warm water and mix it into the batter. Let it ferment for 6-8 hours.
  4. Add salt to the batter and mix well.
  5. Heat an appam pan, pour a ladle of batter, and swirl the pan to spread the batter evenly. Cover and cook for 2-3 minutes until the edges turn crispy.
  6. Serve the crispy appam with coconut milk.
