Ingredients
- 1 package of phyllo dough
- 1 cup feta cheese, crumbled
- 1 cup ricotta cheese
- 2 cups fresh spinach, chopped
- 1/2 cup unsalted butter, melted
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the feta cheese, ricotta cheese, chopped spinach, salt, and black pepper.
- Unroll the phyllo dough and cover it with a damp towel to prevent it from drying out.
- Place one sheet of phyllo dough on a clean surface and brush it lightly with melted butter. Repeat with 5 more sheets, stacking them on top of each other.
- Cut the stacked phyllo dough into 6 equal squares.
- Place a spoonful of the cheese and spinach mixture in the center of each square.
- Fold the edges of the phyllo dough over the filling to form a triangle shape, then place the pies on a baking sheet.
- Brush the tops of the pies with more melted butter.
- Bake in the preheated oven for 20-25 minutes, or until the pies are golden brown and crispy.
- Remove from the oven and let the pies cool for a few minutes before serving.
