Ingredients
- 4 fish fillets (such as tilapia or catfish)

- 1/2 cup cornstarch
- 1 teaspoon turmeric powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil for frying
- 3 cloves garlic, minced
- 1 shallot, finely chopped
- 1 red chili, sliced
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 1/2 cup water
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
- In a bowl, mix the all-purpose flour, cornstarch, turmeric powder, salt, and black pepper.
- Dredge the fish fillets in the flour mixture, shaking off any excess.
- Heat vegetable oil in a pan over medium heat. Fry the fish fillets until golden and crispy, then transfer to a paper towel-lined plate to drain excess oil.
- In a separate pan, heat some oil and sauté the garlic, shallot, and red chili until fragrant.
- Add fish sauce, sugar, and water to the pan. Simmer for a few minutes until the sauce thickens slightly.
- Stir in lime juice and adjust the seasoning to taste.
- Pour the turmeric sauce over the crispy fish fillets and garnish with fresh cilantro.
