Ingredients
- 1 whole fish, cleaned and scaled
- 1 cup cornstarch
- 1/2 cup vegetable oil
- 1/2 cup ketchup
- 1/4 cup rice vinegar
- 1/4 cup sugar
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch, dissolved in 2 tablespoons water
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
Instructions
- Pat the fish dry with paper towels and season with salt and pepper.
- Coat the fish with cornstarch, shaking off any excess.
- Heat vegetable oil in a large skillet over medium-high heat.
- Fry the fish until golden brown and crispy, about 5-7 minutes per side. Drain on paper towels.
- In a separate pan, sauté the garlic and ginger until fragrant.
- Add the bell peppers and onion, and cook until slightly softened.
- Stir in the ketchup, rice vinegar, sugar, and soy sauce. Bring to a simmer.
- Stir in the cornstarch mixture and cook until the sauce thickens.
