Crispy Fried Scallion Pancake (Suān Cōngyóubǐng)

Ingredients

  • 2 cups all-purpose flour
  • 1 cup warm water
  • 1 cup chopped scallions
  • 1/4 cup vegetable oil
  • Salt to taste

Instructions

  1. In a large bowl, mix the flour and warm water to form a dough. Knead the dough for 5 minutes, then cover and let it rest for 15 minutes.
  2. Divide the dough into 4 equal parts and roll each part into a thin circle.
  3. Brush the dough circles with vegetable oil and sprinkle chopped scallions and salt on top.
  4. Roll up the dough circles into tight cylinders, then coil each cylinder into a round dough ball.
  5. Flatten each dough ball into a pancake shape.
  6. Heat a non-stick pan over medium heat and add a bit of vegetable oil. Cook the pancakes for 3-4 minutes on each side until golden and crispy.
  7. Remove from the pan and drain on paper towels. Cut into wedges and serve hot.
