Suān Cōngyóubǐng, also known as Crispy Fried Scallion Pancake, is a popular dish in Tianjin Cuisine. This savory pancake is made with a simple dough and filled with fragrant scallions, then pan-fried until crispy and golden brown.
Ingredients
- 2 cups all-purpose flour
- 1 cup warm water
- 1 cup chopped scallions
- 1/4 cup vegetable oil
- Salt to taste
Instructions
- In a large bowl, mix the flour and warm water to form a dough. Knead the dough for 5 minutes, then cover and let it rest for 15 minutes.
- Divide the dough into 4 equal parts and roll each part into a thin circle.
- Brush the dough circles with vegetable oil and sprinkle chopped scallions and salt on top.
- Roll up the dough circles into tight cylinders, then coil each cylinder into a round dough ball.
- Flatten each dough ball into a pancake shape.
- Heat a non-stick pan over medium heat and add a bit of vegetable oil. Cook the pancakes for 3-4 minutes on each side until golden and crispy.
- Remove from the pan and drain on paper towels. Cut into wedges and serve hot.
