Crispy Fried Shrimp Pancake (Suān Xiājiān)

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1/2 pound fresh shrimp, peeled and deveined
  • 2 green onions, finely chopped
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon white pepper

Instructions

  1. In a bowl, mix the flour, water, and salt to make a smooth batter.
  2. Chop the shrimp into small pieces and mix with green onions and white pepper.
  3. Heat oil in a non-stick pan over medium heat.
  4. Pour half of the batter into the pan, then evenly spread the shrimp mixture on top.
  5. Pour the remaining batter over the shrimp mixture to cover it completely.
  6. Cook for 3-4 minutes until the bottom is golden and crispy, then carefully flip the pancake and cook the other side for another 3-4 minutes.
  7. Remove from the pan, cut into wedges, and serve hot.
