Crispy Koulouri Bread (Τραγανό ψωμί κουλούρι)

Ingredients

  • 4 cups all-purpose flour
  • 1 tablespoon active dry yeast
  • 1 teaspoon sugar
  • 1 1/2 cups warm water
  • 1/4 cup olive oil
  • 1 teaspoon salt

Instructions

  1. In a small bowl, dissolve the sugar in the warm water. Sprinkle the yeast over the water and let it sit for 5 minutes, or until it becomes foamy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Stir until a soft dough forms.
  3. Knead the dough on a floured surface for 8-10 minutes, or until it becomes smooth and elastic. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  4. Preheat the oven to 400°F (200°C). Punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope and then shape it into a circle, pinching the ends together to form a koulouri shape.
  5. Place the koulouri breads on a baking sheet lined with parchment paper. Let them rest for 15 minutes. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  6. Remove from the oven and let the koulouri breads cool on a wire rack before serving.
