Crispy Kuurdak (Куурдак)
Куурдак is a traditional Kyrgyz dish made with crispy fried meat and potatoes. It's a hearty and flavorful meal that is perfect for gatherings and special occasions.
Ingredients
- 500g lamb or beef, cut into small pieces
- 4 large potatoes, peeled and cubed
- 1 onion, finely chopped
- 3-4 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Fresh parsley for garnish
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the chopped onion and minced garlic, and sauté until they are soft and fragrant.
- Add the meat to the pan and cook until it is browned on all sides.
- Stir in the cumin, paprika, salt, and pepper.
- Add the cubed potatoes to the pan and mix well with the meat and spices.
- Cover the pan and cook for about 40-45 minutes, stirring occasionally, until the potatoes are tender and the meat is crispy.
- Garnish with fresh parsley before serving.
