Crispy Kuurdak (Куурдак)

Ingredients

  • 500g lamb or beef, cut into small pieces
  • 4 large potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 3-4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Fresh parsley for garnish

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until they are soft and fragrant.
  3. Add the meat to the pan and cook until it is browned on all sides.
  4. Stir in the cumin, paprika, salt, and pepper.
  5. Add the cubed potatoes to the pan and mix well with the meat and spices.
  6. Cover the pan and cook for about 40-45 minutes, stirring occasionally, until the potatoes are tender and the meat is crispy.
  7. Garnish with fresh parsley before serving.
