Crispy Masala Dosa
Crispy Masala Dosa is a popular South Indian dish that is enjoyed as a breakfast or snack. It is a thin, crispy pancake made from fermented rice and lentil batter, filled with a spicy potato filling.
Ingredients
- 2 cups rice
- 1 cup urad dal (black gram lentils)
- 1/2 teaspoon fenugreek seeds
- 3-4 medium potatoes, boiled and mashed
- 1 onion, finely chopped
- 2-3 green chilies, finely chopped
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 sprig curry leaves
- Salt to taste
- Oil for cooking
Instructions
- Wash and soak the rice, urad dal, and fenugreek seeds in water for 6-8 hours.
- Grind the soaked ingredients into a smooth batter and let it ferment overnight.
- Prepare the potato filling by sautéing mustard seeds, cumin seeds, and curry leaves in oil. Add onions, green chilies, turmeric powder, and mashed potatoes. Cook until well combined.
- Heat a non-stick pan and pour a ladleful of dosa batter. Spread it in a circular motion to make a thin pancake. Drizzle oil around the edges and cook until crispy.
- Place a portion of the potato filling in the center of the dosa, fold it, and serve hot.
