Crispy Masala Vadai

Ingredients

  • 2 cups chana dal (split chickpeas)
  • 1 onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1 inch ginger, grated
  • 1/4 cup fresh coriander leaves, chopped
  • 1 tsp fennel seeds
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • Salt to taste
  • Oil for deep frying

Instructions

  1. Soak the chana dal in water for 2-3 hours, then drain well.
  2. In a food processor, coarsely grind the chana dal without adding any water.
  3. Transfer the ground dal to a mixing bowl and add the chopped onion, green chilies, ginger, coriander leaves, fennel seeds, cumin seeds, turmeric powder, and salt. Mix well.
  4. Heat oil in a deep frying pan over medium heat.
  5. Take a small portion of the mixture and shape it into a flat round vadai. Carefully slide it into the hot oil.
  6. Fry the vadai in batches until they turn golden brown and crispy. Remove and drain on paper towels.
  7. Serve hot with chutney or sauce.
