Crispy Medu Vada

Ingredients

  • 2 cups urad dal (black gram)
  • 1 inch ginger, grated
  • 2-3 green chilies, finely chopped
  • 1/2 teaspoon cumin seeds
  • 10-12 curry leaves, finely chopped
  • 1/4 cup finely chopped fresh coriander leaves
  • Salt to taste
  • Oil for deep frying

Instructions

  1. Wash and soak the urad dal in water for 4-5 hours.
  2. Drain the water and grind the dal into a smooth batter using very little water.
  3. Add ginger, green chilies, cumin seeds, curry leaves, coriander leaves, and salt to the batter. Mix well.
  4. Heat oil in a deep frying pan.
  5. Wet your hands, take a small portion of the batter, and shape it into a round disc with a hole in the center.
  6. Gently slide the vada into the hot oil and fry until golden and crispy.
  7. Remove the vada from the oil and drain on paper towels.
  8. Serve hot with coconut chutney or sambar.
