Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup ghee (clarified butter)
  • 1 cup yellow lentils (moong dal), soaked
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon ginger, grated
  • 1 teaspoon green chili, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Oil for deep frying

Instructions

  1. In a bowl, mix the all-purpose flour and ghee. Add a little water at a time and knead into a stiff dough. Cover and let it rest for 15 minutes.
  2. Meanwhile, prepare the lentil filling. In a pan, heat some oil and add cumin seeds and fennel seeds. Once they splutter, add ginger and green chili. Sauté for a minute.
  3. Add the soaked lentils, turmeric powder, coriander powder, red chili powder, garam masala, and salt. Cook the lentils until they are soft and dry. Let the mixture cool.
  4. Divide the dough into small balls. Roll out each ball into a small circle. Place a spoonful of the lentil filling in the center and bring the edges together to seal the filling inside. Flatten the ball gently.
  5. Heat oil in a pan for deep frying. Once the oil is hot, carefully slide in the stuffed dough balls and fry until they turn golden and crispy.
  6. Remove the kachoris from the oil and drain on a paper towel to remove excess oil.
  7. Serve the crispy pastry stuffed with spiced lentils hot with chutney or tea.
