Ingredients
- 2 cups all-purpose flour
- 1/4 cup ghee (clarified butter)
- 1 cup yellow lentils (moong dal), soaked
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 1 teaspoon ginger, grated
- 1 teaspoon green chili, finely chopped
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- Oil for deep frying
Instructions
- In a bowl, mix the all-purpose flour and ghee. Add a little water at a time and knead into a stiff dough. Cover and let it rest for 15 minutes.
- Meanwhile, prepare the lentil filling. In a pan, heat some oil and add cumin seeds and fennel seeds. Once they splutter, add ginger and green chili. Sauté for a minute.
- Add the soaked lentils, turmeric powder, coriander powder, red chili powder, garam masala, and salt. Cook the lentils until they are soft and dry. Let the mixture cool.
- Divide the dough into small balls. Roll out each ball into a small circle. Place a spoonful of the lentil filling in the center and bring the edges together to seal the filling inside. Flatten the ball gently.
- Heat oil in a pan for deep frying. Once the oil is hot, carefully slide in the stuffed dough balls and fry until they turn golden and crispy.
- Remove the kachoris from the oil and drain on a paper towel to remove excess oil.
- Serve the crispy pastry stuffed with spiced lentils hot with chutney or tea.
