Ingredients

  • 1 whole pork knuckle (pata), about 3-4 lbs
  • 6 cups water
  • 1 head garlic, crushed
  • 1 onion, quartered
  • 3 bay leaves
  • 1 tablespoon whole peppercorns
  • 1/2 cup soy sauce
  • 1/4 cup vinegar
  • 1 teaspoon salt
  • 4 cups cooking oil, for deep-frying

Instructions

  1. In a large pot, combine water, garlic, onion, bay leaves, peppercorns, soy sauce, vinegar, and salt. Add the pork knuckle and bring to a boil. Simmer for 1-1.5 hours or until the meat is tender.
  2. Remove the pork knuckle from the pot and let it air dry for at least 30 minutes.
  3. Heat the cooking oil in a deep fryer or large pot to 350°F.
  4. Carefully lower the pork knuckle into the hot oil and deep-fry for 10-15 minutes or until the skin is crispy and golden brown.
  5. Remove from the oil and let it rest for a few minutes before chopping into serving pieces.
