Crispy Pata Adventure

Ingredients
- 1 whole pork knuckle (pata), about 3-4 lbs
- 6 cups water
- 1 head garlic, crushed
- 1 onion, quartered
- 3 bay leaves
- 1 tablespoon whole peppercorns
- 1/2 cup soy sauce
- 1/4 cup vinegar
- 1 teaspoon salt
- 4 cups cooking oil, for deep-frying
Instructions
- In a large pot, combine water, garlic, onion, bay leaves, peppercorns, soy sauce, vinegar, and salt. Add the pork knuckle and bring to a boil. Simmer for 1-1.5 hours or until the meat is tender.
- Remove the pork knuckle from the pot and let it air dry for at least 30 minutes.
- Heat the cooking oil in a deep fryer or large pot to 350°F.
- Carefully lower the pork knuckle into the hot oil and deep-fry for 10-15 minutes or until the skin is crispy and golden brown.
- Remove from the oil and let it rest for a few minutes before chopping into serving pieces.
