Ingredients

  • 2 lbs pork belly, cut into serving pieces
  • 4 cloves garlic, crushed
  • 1 onion, quartered
  • 3 bay leaves
  • 1 tablespoon whole peppercorns
  • 4 cups water
  • 1 tablespoon salt
  • 1 teaspoon ground black pepper
  • 2 cups cooking oil

Instructions

  1. In a pot, combine pork belly, garlic, onion, bay leaves, whole peppercorns, water, salt, and ground black pepper. Bring to a boil and simmer until pork is tender.
  2. Remove the pork belly from the pot and let it cool. Pat the pork belly dry with paper towels.
  3. Heat the cooking oil in a deep pan. Carefully add the pork belly pieces and fry until golden and crispy.
  4. Remove the crispy pork belly from the pan and drain excess oil on paper towels.
  5. Slice the crispy pork belly into serving pieces and serve with your favorite dipping sauce.
