Crispy Rava Dosa

Ingredients

  • 1 cup semolina (rava)
  • 1/2 cup rice flour
  • 1/4 cup all-purpose flour
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1/2 inch ginger, grated
  • 1/4 cup fresh coriander leaves, chopped
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 3 cups water
  • Oil for cooking

Instructions

  1. In a large mixing bowl, combine semolina, rice flour, all-purpose flour, chopped onion, green chilies, grated ginger, chopped coriander leaves, cumin seeds, black pepper, and salt.
  2. Gradually add water and mix to form a thin batter. Let it rest for 15 minutes.
  3. Heat a non-stick pan or cast iron skillet over medium heat. Once hot, pour a ladleful of the batter and spread it in a circular motion to form a thin layer.
  4. Drizzle some oil around the edges and cook until the edges turn golden brown and crispy.
  5. Flip the dosa and cook for another minute. Remove from the pan and serve hot with chutney or sambar.
