Crispy Rava Idli (ರವ ಇಡ್ಲಿ)
ರವ ಇಡ್ಲಿ (Crispy Rava Idli) is a popular South Indian breakfast dish that is easy to make and delicious to eat. It is a variation of the traditional idli, made with semolina (rava) and a few other ingredients. This recipe yields crispy and flavorful idlis that are perfect to enjoy with coconut chutney and sambar.
Ingredients
- 2 cups semolina (rava)
- 1 cup yogurt
- 1/2 cup water
- 1/2 tsp baking soda
- 1 tsp mustard seeds
- 1 tsp urad dal
- 1/2 tsp asafoetida (hing)
- 2-3 green chilies, finely chopped
- 1 inch ginger, grated
- 1/4 cup fresh coriander leaves, chopped
- Salt to taste
- 2 tbsp oil
Instructions
- In a bowl, mix the semolina, yogurt, and water to make a thick batter. Let it rest for 10 minutes.
- Heat oil in a pan and add mustard seeds. Once they splutter, add urad dal, green chilies, and ginger. Sauté until the dal turns golden brown.
- Add asafoetida, coriander leaves, and salt to the batter. Mix well.
- Add the sautéed ingredients to the batter and mix well.
- Add baking soda and mix gently. The batter should be of idli batter consistency.
- Grease the idli plates and pour the batter into each mold.
- Steam the idlis for 12-15 minutes or until a toothpick inserted comes out clean.
- Once done, remove the idli plates from the steamer and let them cool for a few minutes.
- Demold the idlis and serve hot with coconut chutney and sambar.
