Crispy Tofu Banh Mi Sliders (Bánh mì chay)
Bánh mì chay, or Crispy Tofu Banh Mi Sliders, are a delicious vegetarian twist on the classic Vietnamese sandwich. These sliders are packed with flavor and texture, making them a perfect option for a light lunch or appetizer.
Ingredients
- 12 slider buns
- 1 block of firm tofu, sliced into 12 pieces
- 1/4 cup cornstarch
- 1/4 cup vegetable oil
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons sugar
- 1 teaspoon sesame oil
- 1 cup shredded carrots
- 1 cup sliced cucumber
- 1/2 cup fresh cilantro leaves
- 1/4 cup mayonnaise
- 1 tablespoon sriracha
Instructions
- In a shallow dish, coat the tofu slices with cornstarch.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the tofu slices and cook until crispy and golden brown, about 3-4 minutes per side. Remove from the skillet and set aside on a paper towel-lined plate.
- In a small bowl, whisk together the soy sauce, rice vinegar, sugar, and sesame oil. Toss the shredded carrots in the mixture and let marinate for 10 minutes.
- In another small bowl, mix the mayonnaise and sriracha together.
- Toast the slider buns until lightly golden.
- Assemble the sliders by spreading the sriracha mayo on the bottom bun, then layering with a piece of crispy tofu, marinated carrots, cucumber slices, and cilantro. Top with the other half of the bun.
