Crispy Tofu Banh Mi Sliders (Bánh mì chay)

Ingredients

  • 12 slider buns
  • 1 block of firm tofu, sliced into 12 pieces
  • 1/4 cup cornstarch
  • 1/4 cup vegetable oil
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon sesame oil
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha

Instructions

  1. In a shallow dish, coat the tofu slices with cornstarch.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the tofu slices and cook until crispy and golden brown, about 3-4 minutes per side. Remove from the skillet and set aside on a paper towel-lined plate.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, sugar, and sesame oil. Toss the shredded carrots in the mixture and let marinate for 10 minutes.
  4. In another small bowl, mix the mayonnaise and sriracha together.
  5. Toast the slider buns until lightly golden.
  6. Assemble the sliders by spreading the sriracha mayo on the bottom bun, then layering with a piece of crispy tofu, marinated carrots, cucumber slices, and cilantro. Top with the other half of the bun.
