Croatian Cevapi (Hrvatski Ćevapi)

Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon baking soda
  • 1/4 cup sparkling water
  • 1 tablespoon vegetable oil

Instructions

  1. In a large bowl, mix together the ground beef, ground pork, chopped onion, minced garlic, paprika, salt, black pepper, and baking soda.
  2. Gradually add the sparkling water while mixing the meat mixture until well combined.
  3. Cover the bowl and refrigerate the mixture for at least 1 hour to allow the flavors to meld.
  4. Preheat the grill to medium-high heat.
  5. Shape the meat mixture into small sausages, about 3 inches long and 1 inch wide.
  6. Brush the sausages with vegetable oil and place them on the grill.
  7. Grill the Ćevapi for about 6-8 minutes, turning occasionally, until they are cooked through and have a nice charred exterior.
  8. Remove the Ćevapi from the grill and let them rest for a few minutes before serving.
