Croatian Cevapi (Hrvatski Ćevapi)

Ingredients
- 1 lb ground beef
- 1 lb ground pork
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon baking soda
- 1/4 cup sparkling water
- 1 tablespoon vegetable oil
Instructions
- In a large bowl, mix together the ground beef, ground pork, chopped onion, minced garlic, paprika, salt, black pepper, and baking soda.
- Gradually add the sparkling water while mixing the meat mixture until well combined.
- Cover the bowl and refrigerate the mixture for at least 1 hour to allow the flavors to meld.
- Preheat the grill to medium-high heat.
- Shape the meat mixture into small sausages, about 3 inches long and 1 inch wide.
- Brush the sausages with vegetable oil and place them on the grill.
- Grill the Ćevapi for about 6-8 minutes, turning occasionally, until they are cooked through and have a nice charred exterior.
- Remove the Ćevapi from the grill and let them rest for a few minutes before serving.
