Croatian Mushroom Risotto (Hrvatski rižoto s gljivama)

Ingredients

  • 1 pound mixed mushrooms, sliced

Instructions

  1. In a large pot, heat the vegetable broth over medium heat.
  2. In a separate large pan, heat the olive oil and sauté the onions and garlic until softened.
  3. Add the Arborio rice to the pan and stir to coat the rice with the oil.
  4. Pour in the white wine and cook until it is absorbed by the rice.
  5. Begin adding the warm vegetable broth to the rice, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
  6. Meanwhile, in a separate pan, sauté the mushrooms in butter until they are golden and tender.
  7. Once the rice is creamy and al dente, stir in the sautéed mushrooms and grated Parmesan cheese.
  8. Season with salt and pepper to taste.
  9. Serve the Croatian Mushroom Risotto hot, garnished with additional Parmesan cheese if desired.
