Croatian Plum Dumplings (Hrvatske knedle s šljivama)

Ingredients

  • 6 large potatoes, peeled and diced
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 12 small plums, pitted
  • 1/4 cup breadcrumbs
  • 1/4 cup sugar

Instructions

  1. In a large pot, boil the potatoes until tender. Drain and mash the potatoes in a large bowl.
  2. Add the flour and salt to the mashed potatoes, and knead until a smooth dough forms.
  3. Divide the dough into 12 equal pieces and flatten each piece into a small round disc.
  4. Place a plum in the center of each disc, then fold the dough around the plum, sealing it completely.
  5. Bring a large pot of water to a boil. Carefully drop the dumplings into the boiling water and cook for about 10 minutes, or until they float to the surface.
  6. In a separate pan, melt the butter and add the breadcrumbs. Cook until the breadcrumbs are golden brown.
  7. Remove the dumplings from the water and roll them in the breadcrumb mixture to coat.
  8. Sprinkle the dumplings with sugar and serve warm.
