Croatian Spinach Pie (Hrvatska pita od špinata)

Ingredients
- 1 pound fresh spinach, washed and chopped
- 1 cup feta cheese, crumbled
- 1 cup ricotta cheese
- 1/2 cup Parmesan cheese, grated
- 1/4 cup fresh parsley, chopped
- 1/4 cup green onions, chopped
- 2 eggs, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/2 cup unsalted butter, melted
- 1 package phyllo dough, thawed
Instructions
- In a large bowl, combine the chopped spinach, feta cheese, ricotta cheese, Parmesan cheese, parsley, green onions, eggs, salt, pepper, and nutmeg. Mix well to combine.
- Preheat the oven to 350°F (175°C). Brush a 9x13 inch baking dish with melted butter.
- Place one sheet of phyllo dough in the prepared baking dish and brush it with melted butter. Repeat with 7 more sheets of phyllo dough, brushing each sheet with melted butter.
- Spoon the spinach and cheese mixture over the phyllo dough in an even layer.
- Layer the remaining phyllo dough sheets on top of the spinach mixture, brushing each sheet with melted butter.
- Using a sharp knife, score the top layer of phyllo dough into squares or diamonds, being careful not to cut all the way through to the filling.
- Bake in the preheated oven for 45 minutes, or until the phyllo dough is golden brown and crispy.
- Allow the spinach pie to cool for a few minutes before slicing and serving.
