Croatian Spinach Pie (Hrvatska pita od špinata)

Ingredients

  • 1 pound fresh spinach, washed and chopped
  • 1 cup feta cheese, crumbled
  • 1 cup ricotta cheese
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup green onions, chopped
  • 2 eggs, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup unsalted butter, melted
  • 1 package phyllo dough, thawed

Instructions

  1. In a large bowl, combine the chopped spinach, feta cheese, ricotta cheese, Parmesan cheese, parsley, green onions, eggs, salt, pepper, and nutmeg. Mix well to combine.
  2. Preheat the oven to 350°F (175°C). Brush a 9x13 inch baking dish with melted butter.
  3. Place one sheet of phyllo dough in the prepared baking dish and brush it with melted butter. Repeat with 7 more sheets of phyllo dough, brushing each sheet with melted butter.
  4. Spoon the spinach and cheese mixture over the phyllo dough in an even layer.
  5. Layer the remaining phyllo dough sheets on top of the spinach mixture, brushing each sheet with melted butter.
  6. Using a sharp knife, score the top layer of phyllo dough into squares or diamonds, being careful not to cut all the way through to the filling.
  7. Bake in the preheated oven for 45 minutes, or until the phyllo dough is golden brown and crispy.
  8. Allow the spinach pie to cool for a few minutes before slicing and serving.
