Crock Pot Carne Guisada

Ingredients
- 2 lbs beef stew meat, cut into 1-inch cubes
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1 cup beef broth
- 2 tbsp tomato paste
- 2 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 2 tbsp all-purpose flour
Instructions
- In a large skillet, heat the vegetable oil over medium-high heat.
- In a bowl, toss the beef stew meat with the flour until evenly coated.
- Working in batches, brown the beef in the hot oil, then transfer to the crock pot.
- Add the onion, garlic, bell pepper, diced tomatoes, beef broth, tomato paste, chili powder, cumin, salt, and pepper to the crock pot. Stir to combine.
- Cover and cook on low for 4 hours, or until the beef is tender.
- Serve the carne guisada hot, garnished with fresh cilantro and a side of warm tortillas.
