Ingredients

  • 2 lbs beef stew meat, cut into 1-inch cubes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 2 tbsp all-purpose flour

Instructions

  1. In a large skillet, heat the vegetable oil over medium-high heat.
  2. In a bowl, toss the beef stew meat with the flour until evenly coated.
  3. Working in batches, brown the beef in the hot oil, then transfer to the crock pot.
  4. Add the onion, garlic, bell pepper, diced tomatoes, beef broth, tomato paste, chili powder, cumin, salt, and pepper to the crock pot. Stir to combine.
  5. Cover and cook on low for 4 hours, or until the beef is tender.
  6. Serve the carne guisada hot, garnished with fresh cilantro and a side of warm tortillas.
