Ingredients

  • 2 cups of milk
  • 1/4 cup of butter
  • 1/4 cup of all-purpose flour
  • 1/2 cup of finely chopped cooked ham
  • 1/2 cup of grated Manchego cheese
  • 2 eggs, beaten
  • 1 cup of breadcrumbs
  • Salt and pepper to taste

Instructions

  1. In a saucepan, heat the milk until it's warm but not boiling.
  2. In another saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
  3. Gradually add the warm milk to the roux, stirring constantly until the mixture thickens.
  4. Stir in the chopped ham and grated Manchego cheese. Season with salt and pepper to taste.
  5. Transfer the mixture to a shallow dish and refrigerate for at least 2 hours until firm.
  6. Shape the chilled mixture into small croquettes, dip them in beaten eggs, and coat with breadcrumbs.
  7. Heat oil in a pan and fry the croquettes until golden brown on all sides.
  8. Remove from the pan and drain on paper towels before serving.
