Ingredients
- 1 lb (450g) salted cod
- 4 cups (1 liter) whole milk
- 1/4 cup (60g) unsalted butter
- 1/4 cup (30g) all-purpose flour
- 2 eggs, beaten
- 2 cups (200g) breadcrumbs
- Vegetable oil, for frying
- Salt and pepper, to taste
Instructions
- Soak the salted cod in cold water for 24 hours, changing the water 3-4 times to remove the salt.
- Once desalted, poach the cod in milk for 10 minutes, then drain and flake the fish.
- In a saucepan, melt the butter over medium heat, then stir in the flour to make a roux.
- Gradually add the milk used to poach the cod, stirring constantly until the mixture thickens to make a smooth béchamel sauce.
- Stir in the flaked cod and season with salt and pepper. Let the mixture cool.
- Shape the cod mixture into small croquettes, dip each croquette into the beaten eggs, then coat with breadcrumbs.
- Heat the vegetable oil in a pan and fry the croquettes until golden brown on all sides.
- Remove the croquettes from the oil and drain on paper towels before serving.
