Ingredients

  • 1 lb (450g) salted cod
  • 4 cups (1 liter) whole milk
  • 1/4 cup (60g) unsalted butter
  • 1/4 cup (30g) all-purpose flour
  • 2 eggs, beaten
  • 2 cups (200g) breadcrumbs
  • Vegetable oil, for frying
  • Salt and pepper, to taste

Instructions

  1. Soak the salted cod in cold water for 24 hours, changing the water 3-4 times to remove the salt.
  2. Once desalted, poach the cod in milk for 10 minutes, then drain and flake the fish.
  3. In a saucepan, melt the butter over medium heat, then stir in the flour to make a roux.
  4. Gradually add the milk used to poach the cod, stirring constantly until the mixture thickens to make a smooth béchamel sauce.
  5. Stir in the flaked cod and season with salt and pepper. Let the mixture cool.
  6. Shape the cod mixture into small croquettes, dip each croquette into the beaten eggs, then coat with breadcrumbs.
  7. Heat the vegetable oil in a pan and fry the croquettes until golden brown on all sides.
  8. Remove the croquettes from the oil and drain on paper towels before serving.
