Ingredients

  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup finely chopped mushrooms
  • 1/4 cup finely chopped onion
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying

Instructions

  1. In a saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly, for 2 minutes to make a roux.
  2. Gradually whisk in the milk until smooth and thickened to make a bechamel sauce.
  3. Stir in the chopped mushrooms, onion, nutmeg, salt, and pepper. Cook for 5-7 minutes until the mushrooms are tender and the mixture is thick. Remove from heat and let it cool.
  4. Shape the mushroom mixture into small cylinders or balls, then dip each croquette into the beaten eggs and coat with breadcrumbs.
  5. In a deep skillet, heat the vegetable oil over medium-high heat. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per batch. Drain on paper towels.
  6. Serve the mushroom croquettes hot and enjoy!
