Croquetas De Setas (mushroom Croquettes)
Croquetas de Setas, or Mushroom Croquettes, are a popular dish in Cantabrian cuisine. These crispy and creamy croquettes are filled with a flavorful mushroom mixture, making them a delicious appetizer or snack.
Ingredients
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 1 cup milk
- 1/2 cup finely chopped mushrooms
- 1/4 cup finely chopped onion
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- 2 eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil for frying
Instructions
- In a saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly, for 2 minutes to make a roux.
- Gradually whisk in the milk until smooth and thickened to make a bechamel sauce.
- Stir in the chopped mushrooms, onion, nutmeg, salt, and pepper. Cook for 5-7 minutes until the mushrooms are tender and the mixture is thick. Remove from heat and let it cool.
- Shape the mushroom mixture into small cylinders or balls, then dip each croquette into the beaten eggs and coat with breadcrumbs.
- In a deep skillet, heat the vegetable oil over medium-high heat. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per batch. Drain on paper towels.
