Ingredients

  • 1 lb mushrooms, finely chopped

  • 3 tbsp butter
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • Salt and pepper to taste
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying

Instructions

  1. In a large skillet, melt the butter over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the mushrooms to the skillet and cook until they release their liquid and it evaporates.
  3. Sprinkle the flour over the mushroom mixture and stir to combine. Cook for 2-3 minutes.
  4. Gradually pour in the milk, stirring constantly, until the mixture thickens.
  5. Remove the skillet from the heat and stir in the Parmesan cheese and parsley. Season with salt and pepper to taste.
  6. Transfer the mushroom mixture to a shallow dish and refrigerate for 1-2 hours, or until firm.
  7. Shape the chilled mushroom mixture into small croquettes. Dip each croquette into the beaten eggs, then coat with breadcrumbs.
  8. In a deep skillet, heat vegetable oil over medium-high heat. Fry the croquettes in batches until golden brown and crispy.
  9. Remove the croquettes from the oil and drain on paper towels. Serve hot.
