Ingredients
- 1 lb mushrooms, finely chopped
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 3 tbsp butter
- 1/4 cup all-purpose flour
- 1 cup milk
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- Salt and pepper to taste
- 2 eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil for frying
Instructions
- In a large skillet, melt the butter over medium heat. Add the onions and garlic, and cook until softened.
- Add the mushrooms to the skillet and cook until they release their liquid and it evaporates.
- Sprinkle the flour over the mushroom mixture and stir to combine. Cook for 2-3 minutes.
- Gradually pour in the milk, stirring constantly, until the mixture thickens.
- Remove the skillet from the heat and stir in the Parmesan cheese and parsley. Season with salt and pepper to taste.
- Transfer the mushroom mixture to a shallow dish and refrigerate for 1-2 hours, or until firm.
- Shape the chilled mushroom mixture into small croquettes. Dip each croquette into the beaten eggs, then coat with breadcrumbs.
- In a deep skillet, heat vegetable oil over medium-high heat. Fry the croquettes in batches until golden brown and crispy.
- Remove the croquettes from the oil and drain on paper towels. Serve hot.
