Ingredients

  • 1 pound cooked shrimp, peeled and deveined

  • Salt and pepper to taste
  • 2 eggs, beaten

Instructions

  1. In a food processor, pulse the cooked shrimp until finely chopped.
  2. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes.
  3. Gradually whisk in the milk, nutmeg, salt, and pepper. Cook until the mixture thickens.
  4. Remove the saucepan from the heat and stir in the chopped shrimp. Let the mixture cool.
  5. Shape the shrimp mixture into small croquettes, then dip each croquette into the beaten eggs and coat with breadcrumbs.
  6. In a deep skillet, heat the oil over medium-high heat. Fry the croquettes until golden brown on all sides.
  7. Remove the croquettes from the oil and place them on a paper towel to drain excess oil.
  8. Serve the croquettes hot and enjoy!
