Ingredients
- 1 pound cooked shrimp, peeled and deveined
- 2 tablespoons butter
- 1/4 cup all-purpose flour
- 1 cup milk
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- 2 eggs, beaten
- 1 cup breadcrumbs
- Oil for frying
Instructions
- In a food processor, pulse the cooked shrimp until finely chopped.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes.
- Gradually whisk in the milk, nutmeg, salt, and pepper. Cook until the mixture thickens.
- Remove the saucepan from the heat and stir in the chopped shrimp. Let the mixture cool.
- Shape the shrimp mixture into small croquettes, then dip each croquette into the beaten eggs and coat with breadcrumbs.
- In a deep skillet, heat the oil over medium-high heat. Fry the croquettes until golden brown on all sides.
- Remove the croquettes from the oil and place them on a paper towel to drain excess oil.
- Serve the croquettes hot and enjoy!
