Ingredients
- 4 green bananas, peeled and grated

- 1/4 cup all-purpose flour
- 2 eggs, beaten

Instructions
- In a large bowl, combine the grated green bananas, onion, garlic, parsley, chives, salt, and black pepper. Mix well.
- Shape the mixture into small croquettes, about 2 inches long and 1 inch wide.
- Place the flour, beaten eggs, and breadcrumbs in three separate shallow dishes.
- Dip each croquette into the flour, then the beaten eggs, and finally coat with breadcrumbs, pressing gently to adhere.
- In a large skillet, heat vegetable oil over medium heat. Fry the croquettes in batches until golden brown, about 3-4 minutes per side.
- Remove the croquettes from the skillet and place on a paper towel-lined plate to drain excess oil.
- Serve the croquettes hot with your favorite dipping sauce.
