Ingredients
- 200g rice noodles
- 200g chicken breast, thinly sliced
- 100g tofu, cubed
- 2 eggs, beaten
- 50g shiitake mushrooms, sliced
- 50g spinach
- 4 cups chicken broth
- 3 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Prepare all ingredients and set aside.
- Bring the chicken broth to a boil in a large pot.
- Cook the rice noodles according to the package instructions, then drain and set aside.
- In a separate pan, heat the vegetable oil and sauté the garlic until fragrant.
- Add the chicken, tofu, and shiitake mushrooms to the pan, and cook until the chicken is no longer pink.
- Pour the beaten eggs into the boiling broth, stirring gently to create egg ribbons.
- Season the broth with soy sauce, salt, and pepper to taste.
- Divide the cooked rice noodles into serving bowls, then top with the chicken, tofu, and vegetable mixture.
- Pour the hot broth over the noodles and ingredients in each bowl.
- Garnish with fresh spinach and serve hot.
