Ingredients

  • 200g rice noodles
  • 200g chicken breast, thinly sliced
  • 100g tofu, cubed
  • 2 eggs, beaten
  • 50g shiitake mushrooms, sliced
  • 50g spinach
  • 4 cups chicken broth
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients and set aside.
  2. Bring the chicken broth to a boil in a large pot.
  3. Cook the rice noodles according to the package instructions, then drain and set aside.
  4. In a separate pan, heat the vegetable oil and sauté the garlic until fragrant.
  5. Add the chicken, tofu, and shiitake mushrooms to the pan, and cook until the chicken is no longer pink.
  6. Pour the beaten eggs into the boiling broth, stirring gently to create egg ribbons.
  7. Season the broth with soy sauce, salt, and pepper to taste.
  8. Divide the cooked rice noodles into serving bowls, then top with the chicken, tofu, and vegetable mixture.
  9. Pour the hot broth over the noodles and ingredients in each bowl.
  10. Garnish with fresh spinach and serve hot.
