Crostini del Castello, or Castle Crostini, is a traditional dish from San Marino, a small country in the Apennine Mountains. This simple yet delicious appetizer is perfect for entertaining or as a snack.
Ingredients
- 4 slices of Italian bread
- 2 tablespoons olive oil
- 1 garlic clove, peeled
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Preheat a stovetop grill or grill pan over medium heat.
- Brush both sides of the bread slices with olive oil.
- Grill the bread for 2-3 minutes on each side until lightly charred.
- Remove the bread from the grill and rub one side with the peeled garlic clove.
- In a bowl, combine the cherry tomatoes, basil, salt, and pepper.
- Spoon the tomato mixture onto the garlic-rubbed side of the grilled bread slices.
- Serve the crostini immediately and enjoy!
