Ingredients
- 4 large eggs
- 1 cup all-purpose flour
- 1 1/2 cups milk
- 1/4 cup granulated sugar
- 1/4 cup orange liqueur
- Zest of 2 oranges
- 1/2 cup freshly squeezed orange juice
- 4 tablespoons unsalted butter
- 2 tablespoons orange liqueur (for flambéing)

Instructions
- In a large mixing bowl, whisk together the eggs, flour, milk, and granulated sugar until smooth.
- Heat a non-stick skillet over medium heat and lightly grease with butter. Pour a small ladleful of batter into the skillet, swirling to coat the bottom evenly. Cook for 1-2 minutes, then flip and cook for an additional 1 minute. Repeat with the remaining batter to make 8 pancakes.
- In a separate pan, melt the butter over medium heat. Add the orange zest and cook for 1 minute. Stir in the orange juice and 1/4 cup of orange liqueur. Simmer for 2-3 minutes until the sauce thickens slightly.
- Fold each pancake into quarters and place them in the orange sauce, coating them evenly. Fold the pancakes in half and arrange them in the pan.
- Warm the 2 tablespoons of orange liqueur in a small saucepan. Carefully ignite the liqueur with a long match and pour it over the pancakes to flambe. Allow the flames to extinguish on their own.
- Serve the pancakes immediately, topped with a scoop of vanilla ice cream if desired.
