Instructions

  1. In a large mixing bowl, whisk together the eggs, flour, milk, and granulated sugar until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease with butter. Pour a small ladleful of batter into the skillet, swirling to coat the bottom evenly. Cook for 1-2 minutes, then flip and cook for an additional 1 minute. Repeat with the remaining batter to make 8 pancakes.
  3. In a separate pan, melt the butter over medium heat. Add the orange zest and cook for 1 minute. Stir in the orange juice and 1/4 cup of orange liqueur. Simmer for 2-3 minutes until the sauce thickens slightly.
  4. Fold each pancake into quarters and place them in the orange sauce, coating them evenly. Fold the pancakes in half and arrange them in the pan.
  5. Warm the 2 tablespoons of orange liqueur in a small saucepan. Carefully ignite the liqueur with a long match and pour it over the pancakes to flambe. Allow the flames to extinguish on their own.
  6. Serve the pancakes immediately, topped with a scoop of vanilla ice cream if desired.
