Ingredients
- 8 rice paper wrappers
- 1 cup julienned carrots
- 1 cup julienned cucumber
- 1 cup julienned jicama
- 1 cup cooked rice vermicelli noodles
- 1/2 cup chopped fresh mint leaves
- 1/2 cup chopped fresh cilantro
- 1/2 cup roasted peanuts, crushed
- 8 lettuce leaves
Instructions
- Soak the rice paper wrappers in warm water until soft, then lay them flat on a clean kitchen towel.
- Place a lettuce leaf on each wrapper, then top with a small amount of carrots, cucumber, jicama, noodles, mint, cilantro, and peanuts.
- Roll the wrappers tightly, tucking in the sides as you go.
- Serve the rolls with a dipping sauce of your choice.
