Crunchy Peanut and Rice Paper Rolls (Bò bía)

Ingredients

  • 8 rice paper wrappers
  • 1 cup julienned carrots
  • 1 cup julienned cucumber
  • 1 cup julienned jicama
  • 1 cup cooked rice vermicelli noodles
  • 1/2 cup chopped fresh mint leaves
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup roasted peanuts, crushed
  • 8 lettuce leaves

Instructions

  1. Soak the rice paper wrappers in warm water until soft, then lay them flat on a clean kitchen towel.
  2. Place a lettuce leaf on each wrapper, then top with a small amount of carrots, cucumber, jicama, noodles, mint, cilantro, and peanuts.
  3. Roll the wrappers tightly, tucking in the sides as you go.
  4. Serve the rolls with a dipping sauce of your choice.
