Crunchy Peanut Chutney (ಕಡಲೆಕಾಯಿ ಚಟ್ನಿ)
This crunchy peanut chutney is a popular condiment in Udupi cuisine, known for its delicious blend of flavors and textures. It pairs perfectly with dosa, idli, or rice dishes.
Ingredients
- 1 cup roasted peanuts
- 2-3 dried red chilies
- 1 small piece of tamarind
- 1/2 teaspoon jaggery
- 1/2 teaspoon salt
- 1/2 cup water
- For tempering:
- 1 tablespoon oil
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon urad dal
- A pinch of asafoetida
- 5-6 curry leaves
Instructions
- Dry roast the peanuts until they are golden brown.
- In a blender, add the roasted peanuts, dried red chilies, tamarind, jaggery, salt, and water. Blend to a coarse paste.
- For tempering, heat oil in a pan and add mustard seeds. Once they splutter, add urad dal, asafoetida, and curry leaves. Pour this tempering over the chutney.
- Mix well and serve the crunchy peanut chutney with your favorite dishes.
