Crunchy Peanut Chutney (ಕಡಲೆಕಾಯಿ ಚಟ್ನಿ)

Ingredients

  • 1 cup roasted peanuts
  • 2-3 dried red chilies
  • 1 small piece of tamarind
  • 1/2 teaspoon jaggery
  • 1/2 teaspoon salt
  • 1/2 cup water
  • For tempering:
  • 1 tablespoon oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon urad dal
  • A pinch of asafoetida
  • 5-6 curry leaves

Instructions

  1. Dry roast the peanuts until they are golden brown.
  2. In a blender, add the roasted peanuts, dried red chilies, tamarind, jaggery, salt, and water. Blend to a coarse paste.
  3. For tempering, heat oil in a pan and add mustard seeds. Once they splutter, add urad dal, asafoetida, and curry leaves. Pour this tempering over the chutney.
  4. Mix well and serve the crunchy peanut chutney with your favorite dishes.
