Crusty Rice (arròs Amb Costra)

Ingredients

  • 2 cups short-grain rice
  • 4 cups chicken or vegetable broth
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tomato, grated
  • 8 oz boneless chicken, cut into small pieces
  • 8 oz rabbit or pork, cut into small pieces
  • 1/2 cup white wine
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 eggs
  • Olive oil

Instructions

  1. Heat some olive oil in a paella pan or large skillet over medium heat.
  2. Add the chicken and rabbit/pork pieces, and cook until browned. Remove from the pan and set aside.
  3. In the same pan, sauté the onion, garlic, and red bell pepper until softened.
  4. Add the grated tomato and cook for a few minutes.
  5. Stir in the rice and smoked paprika, and cook for 2-3 minutes.
  6. Pour in the white wine and let it reduce slightly.
  7. Add the browned meat back into the pan.
  8. Pour in the broth, season with salt and pepper, and bring to a boil. Reduce the heat and simmer for 15-20 minutes, or until the rice is almost cooked and most of the liquid has been absorbed.
  9. Preheat the oven to 400°F (200°C).
  10. Beat the eggs and pour them over the rice, spreading evenly.
  11. Place the pan in the oven and bake for 10-15 minutes, or until the eggs are set and the top is golden and crusty.
  12. Remove from the oven and let it rest for a few minutes before serving.
