Crusty Rice (Arròs amb Costra) is a traditional Valencian dish that features a crispy, golden crust on top of a flavorful rice and meat mixture. This dish is a perfect combination of textures and flavors, making it a favorite for special occasions and family gatherings.
Ingredients
- 2 cups short-grain rice
- 4 cups chicken or vegetable broth
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tomato, grated
- 8 oz boneless chicken, cut into small pieces
- 8 oz rabbit or pork, cut into small pieces
- 1/2 cup white wine
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 4 eggs
- Olive oil
Instructions
- Heat some olive oil in a paella pan or large skillet over medium heat.
- Add the chicken and rabbit/pork pieces, and cook until browned. Remove from the pan and set aside.
- In the same pan, sauté the onion, garlic, and red bell pepper until softened.
- Add the grated tomato and cook for a few minutes.
- Stir in the rice and smoked paprika, and cook for 2-3 minutes.
- Pour in the white wine and let it reduce slightly.
- Add the browned meat back into the pan.
- Pour in the broth, season with salt and pepper, and bring to a boil. Reduce the heat and simmer for 15-20 minutes, or until the rice is almost cooked and most of the liquid has been absorbed.
- Preheat the oven to 400°F (200°C).
- Beat the eggs and pour them over the rice, spreading evenly.
- Place the pan in the oven and bake for 10-15 minutes, or until the eggs are set and the top is golden and crusty.
- Remove from the oven and let it rest for a few minutes before serving.
