Cseresznyeleves, also known as Saxon Cherry Soup, is a traditional dish from Transylvanian Saxon cuisine. This sweet and tangy soup is a refreshing summer treat that can be served as a starter or a dessert.
Ingredients
- 1 lb fresh cherries, pitted
- 4 cups water
- 1/2 cup sugar
- 1 cinnamon stick
- 1/4 cup sour cream
- 1 tablespoon all-purpose flour
- 1/4 cup cold water
Instructions
- In a large pot, combine the pitted cherries, water, sugar, and cinnamon stick. Bring to a boil, then reduce heat and simmer for 15 minutes.
- In a small bowl, mix the sour cream and flour with cold water until smooth. Slowly pour this mixture into the simmering soup, stirring constantly.
- Simmer for an additional 5 minutes, then remove the cinnamon stick and let the soup cool to room temperature.
- Refrigerate the soup for at least 2 hours before serving.
