Cuban Mojo Grilled Pineapple (Piña Asada al Mojo Cubano)

Ingredients

  • 1 ripe pineapple, peeled and cored
  • 1/4 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 3 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together the orange juice, lime juice, minced garlic, olive oil, oregano, cumin, salt, and pepper to make the mojo marinade.
  2. Cut the pineapple into 1-inch thick slices and place them in a shallow dish.
  3. Pour the mojo marinade over the pineapple slices, making sure they are well coated. Marinate for at least 30 minutes, turning the slices occasionally.
  4. Preheat the grill to medium-high heat.
