Ingredients
- 1 ripe pineapple, peeled and cored
- 1/4 cup fresh orange juice
- 1/4 cup fresh lime juice
- 3 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- In a bowl, whisk together the orange juice, lime juice, minced garlic, olive oil, oregano, cumin, salt, and pepper to make the mojo marinade.
- Cut the pineapple into 1-inch thick slices and place them in a shallow dish.
- Pour the mojo marinade over the pineapple slices, making sure they are well coated. Marinate for at least 30 minutes, turning the slices occasionally.
