Cucumber Chutney, also known as Bhojpuri Kachri Chutney, is a tangy and spicy condiment from the Bhojpuri cuisine. It is made with fresh cucumbers, green chilies, and a blend of aromatic spices, making it a perfect accompaniment to a variety of dishes.

Cucumber Chutney (bhojpuri Kachri Chutney)

Ingredients

  • 2 medium cucumbers, peeled and grated
  • 2-3 green chilies, finely chopped
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 tablespoon oil
  • Salt to taste
  • 1 tablespoon fresh coriander leaves, chopped

Instructions

  1. In a pan, heat the oil over medium heat.
  2. Add the mustard seeds and cumin seeds. Once they start to splutter, add the grated cucumbers and chopped green chilies.
  3. Saute for 2-3 minutes, then add the turmeric powder, red chili powder, and salt. Mix well.
  4. Cook for another 5-7 minutes until the cucumbers are cooked and the excess moisture has evaporated.
  5. Remove from heat and let it cool to room temperature.
  6. Garnish with fresh coriander leaves and serve as a side dish or condiment.
