Cucumber Chutney (bhojpuri Kachri Chutney)
Cucumber Chutney, also known as Bhojpuri Kachri Chutney, is a tangy and spicy condiment from the Bhojpuri cuisine. It is made with fresh cucumbers, green chilies, and a blend of aromatic spices, making it a perfect accompaniment to a variety of dishes.
Ingredients
- 2 medium cucumbers, peeled and grated
- 2-3 green chilies, finely chopped
- 1 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1 tablespoon oil
- Salt to taste
- 1 tablespoon fresh coriander leaves, chopped
Instructions
- In a pan, heat the oil over medium heat.
- Add the mustard seeds and cumin seeds. Once they start to splutter, add the grated cucumbers and chopped green chilies.
- Saute for 2-3 minutes, then add the turmeric powder, red chili powder, and salt. Mix well.
- Cook for another 5-7 minutes until the cucumbers are cooked and the excess moisture has evaporated.
- Remove from heat and let it cool to room temperature.
- Garnish with fresh coriander leaves and serve as a side dish or condiment.
