Ingredients
- 2 cucumbers, peeled and sliced
- 1 onion, chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 lb stewing beef, cubed
- 2 cups beef broth
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef over medium heat.
- Add the onions and garlic, and cook until softened.
- Stir in the tomatoes, cumin, paprika, salt, and pepper.
- Pour in the beef broth and bring to a boil.
- Reduce the heat, cover, and simmer for 45 minutes.
- Add the sliced cucumbers and continue to simmer for an additional 15 minutes.
- Adjust seasoning if necessary and serve hot.
